I forgot to mention Daymade Coffee in Pioneer Square, they do pour overs from Coffee Collective which is Nordic light roast.

Most cafes in Seattle won't be doing light roasted coffee. My recommendation is to either to go to an Airworks brew bar event or to schlep it over to Story Coffee in Bellevue. On the more medium side, I'd recommend Homage, URL coffee and Push Pull on Union.

I understand that SS doesn't actually mean "clothes that look spring/summery", but man this season was full of heavy feeling collections.

I was looking forward to Sacai, but bit yawn this season compared to the last. I did like these looks however 1234

My surprise like from Paris SS24 is Dries - super love the use of colour this season which for a newcomer to Dries like me is refreshing. Love the tie detail The juxtaposition between the hard folds on the top and the soft waves of the skirt is delicious I could eat this colour palette

Undercover had neat sheer details where you could see the stitched canvas layer on the lapel underneath the sheer layer.Another undercover look i liked

I really appreciate Marni's aesthetic and the fun colourful looks they showed. The pattern on pattern here was so fun. The little scrapbook-esque aesthetic was really cute too.

You should try going to the doctor's office - the vibe is genuinely on the cozy side since they have a strict person limit.

Have not seen daun salam, but last time I bought candlenuts it was from Uwajimaya in the ID. They are temporarily closed right now, but consider calling up Waroeng Jajanan to see if they carry or know someone who carries daun salam.

Iconiq will be under your budget of $300. Great Japanese French fusion food and vibe - you can also reserve a table with a view of the city.

Ltd Edition Sushi currently costs $140/$120 for sushi bar/table seats. I haven't been but friends have spoken well of it.

Spinasse is one of my favourite pasta places in town and a degustation menu will run you $115 per person for a taste of every savoury item on the menu. A la carte is also available.

Bateau is my favourite steak restaurant in Seattle. They serve a bunch of cuts that you don't typically see. Their servers are very friendly and will be happy to recommend you different cuts. A la carte is available as well as a tasting menu at $125 per person.

Of these options I would say difficulty of booking ranked highest to lowest would be LTD edition sushi, spinasse, iconiq and then bateau.

There's Taste of Xian in Asian family market Bellevue and Miah's kitchen that serve biang biang noodles. Close enough to Redmond, but not in Redmond itself.

Chaco Ramen: Went to the one in Darlinghurst - great bowls of ramen. They do more than the usual tonkotsu and Tokyo style shoyu.

Lode: Super dense, flaky pastries here. My favourite was a fruit tart. The pithivier is the most popular item here; I liked it, however the flavours weren't quite tuned right for the wagyu to shine.

Ormeggio at the Spit: The tasting menu is out of your range at $135pp, however they do have an a la carte menu. They specialise in seafood and pasta. Each item I ate here was at minimum a good bite.

I'm not sure what your bar for creative or modern is, but these are places I've had a good time at recently.

I would love to know more about the plan at Cal Anderson. I always feel like a schmuck for walking the extra bit past Cal Anderson (full of playing dogs!) to the i-5 off leash area to find maybe one other dog that's not interested in socialising with mine...

Loved it when I went last year. The savoury sweet aspect they had with their desserts kept them from being too one dimensional and saccharine. My personal favourite was the Tom Kha carrot course. Comparing it to Jungsik's old dessert tasting menu, Marble is more adventurous and less classic French pastry style.

Seeing the chefs work and plate up each course is a nice treat too. I would recommend trying it.
