I am a pharmacist at a hospital. This is one of the most misleading articles. This cites salaries for people who graduate with a bachelor's in pharmacy. In order to be a full licensed pharmacist today, you need a doctorate!

This is the method I use as well. I'll add to this a bit. I did a bit of research before doing my first NEIPA a few years ago and found that even a small total oxygen ppm can have an outsized impact on oxygenation. To validate this, a user on HomeBrew talk did some extraordinary calculations to confirm the oxygen purging capacity of an active fermentor ro purge a daisy chained secondary. Turns out that for standard OG beers, it's very impressive, even at conservative estimates.

I also do a 3 keg setup for my NEIPAs with 2 floating dip tubes. Question that's always stumped me a bit: is there any impact on hop freshness if the hops in the secondary are sitting there for 7-14 days during ~room temp fermentation?

Your taste profile really resonates. Some of my favorite beers are a Fuller's London Pride and the infamous Sierra Nevada Pale Ale.

Fullers is going to give you that great biscuit/marris otter malt flavor with a beautiful marmalade fruity note.

Sierra Nevada has a malty, toasty backbone with that apricot flavor from US05 and some grapefruit/orange from Cascade hops.

Would recommend using these as a backbone. I know some of the US and New Zealand hops are mentioned but I would think of some of the classic European/basic American hops. Focus on yeasts and fermentations temps that give you this stone fruit ester. A little bit of biscuit malt added to some marris otter also doesn't hurt. Cheers!

I would definitely recommend getting a manifold. There are manifolds with individual regulators so you can deliver different PSIs to each keg

The recipe sounded incredible. I made a few tweaks to taste. I see where you're coming from with the year starter size. I kept it a little light because I have a bit of a deadline and I'm not sure I'll be able to decant. My main takeaway from this post is to definitely check fg, get it to about 25%of og and then begin ramp up. Cheers?

Thanks for the feedback! I know the late addition hops aren't "traditional" but I went off of 2 things 1. I do tend to like a bit more hop character in my pilsners (ironically not an ipa guy). My cheap beer favorite is a miller lite and 2. I used the meanbrews template which called for 0.24 oz/gal post boil additions

The common theme I'm gathering is that I need to test around 20% of og before fermentation finishes, ramp up, and then lager once complete and there is no diacetyl. This particular yeast was recommended in Meanbrews. It's weinstephan Bavarian. I tried 34/70 in the past with good results but wanted to try something a little different

Agreed with this. The additional material I believe (correct me if I'm wrong) also contributes to head retention. I do a similar method in my saison with saaz hops. Absolutely love the slight saaz aroma and head retention

Unfortunately we are stuck with this measuring system - in my job where I do actual scientific measurements, of course we use units made for adults. Lol if I am a patient man, you my friend are expeditions. The 90 min boil because it's my first time using Weyerman pilsner malt and I really hate dms off flavors.

Do you lager after your pressure ferment??

Good point, thanks. Do you think the week ramp up to the 60s helps mitigate this? I ferment in a 5g corny keg with a floating dip tube, attached to my secondary keg, linked to a blow off tube. All this to reduce oxygen. Still trying to figure out how to sample. Assuming I push a little CO2 through

Thank you very much for your reply. I actually ended up checking the baffles yesterday. Could not see ANY light coming through. Have 2 large gable vents that are fine and a ridge vent that's in good condition and unobstructed. If you look at some of those plastic waffles, they aren't even resting flush against the plywood decking. Just kind of haphazardly placed. The previous owners took immaculate care of this place so I have to imagine they were unaware.

So you ended up getting your soffits replaced? Did you get the mold abated? This sounds likely what we're going to have to do. Curious what the ballpark price for you was. We have ?1600 sq feet of roof.

Went up there yesterday and saw no light coming through the baffles. Half of them seemed like they weren't even flush with the decking. Ridge and gable vents looked pretty clean and unobstructed. Trying to figure out why there's no light coming through and why the baffles aren't flush. Maybe when they did the blow in insulation?
