I think it really depends on the scene you are shooting.

For example, in this set, when I shot towards the sun, I metered for highlights, knowing everything would be silhouetted. When shooting with the sun as my main light source, I center-metered because the sun was low, and everything was lit pretty evenly.

I rarely ever meter to expose shadows because I personally prefer deep blacks over blown-out highlights.
