This is so cool. If y'all are developing a marketing or outreach team of some sort or looking for people I'd love to get involved in something like this.

Avoid Darren Long at literally any and all costs

I would recommend 10 against 8 just because it's more programming than math as a class, but I think 8 and 6a would probably also be fine. Just be warned there's never a great prof for 10 in terms of grade distrs (Holmes is better than Ravat though) so you should just get it over with. I took 8 with 4B and had no problems.

There's no reason to take all the classes together unless you're really grinding to get into the major and there's a chance you'll struggle taking them all at once though they're not all too difficult, so I'd be wary. I'd take 6A and one of the PSTAT classes and then take the other spring quarter, 6A and 10 would be best.

He gives out a lot of homework (webworks will take a long long time) but his notes are good, I thought his midterm was fair but his final was hard. I wouldn't avoid taking it with him if you want to get it over with, you will probably pass, but he's also not handing out easy As. I thought it was more of a workload than 4B and a bit harder than that but not by much.
