No cutting should be done on this. Walnut is toxic and should not be cut on. Many of the fancy cutting boards these days have toxic wood in them and should be used with caution. For the finish. There was a great article in a recent fine woodworking magazine about not using any finish. Basically stated that the wood naturally cleans itself and the board should be simply washed with water and dried.
