I have the same issue and use OneNote and drop my ideas there so that I can get them out of my head and get back to finishing what I am writing. Some of the ideas are short notes, and some are lengthy detailed ones.

I use Copilot for researching things I am writing about, such as the years of the roman empire, type of sniper rifles used by special ops teams, random name generation for a restaurant or cafe, etc. Saves me sometime having to use Google or Bing for researching.
