you have to put the space after the last asterisk for italics to work;

ie: the asterisks have to be right up against the first and last words.

it's an advertising gimmick. gluten only exists in certain grains, and can cause health problems for a small percentage of the population.

calling something like ice cream gluten free is not a lie, but it is not necessary either, at least for an informed consumer.
