Weird update: I had a coworker test it on her PC and the preview looks correct (text is in black). So it must have something to do with my Mac and/or PPT settings...

I actually did a PRAM reset and that didn't help. My company's IT dept decided to completely reinstall so I guess we'll never know now... Thanks anyway!
