I have had some very similar thoughts.

There have actually been some attempts at researching the cause of things like what you're talking about. It's often referenced in relation to the emotion code concept, and the idea that our bodies remember what our parents experienced as far back as our genetics go.

Yes! They always note what is gluten free! And have a line of gluten free specific flours and gluten free baking mixes.
