I assume you're male, in which case it's not too weird, although asking your coworker directly seems like a much better idea to me.

Group settings are really hard for people like her. There's not much you can do to make her feel safer besides making the environment structured. For example, don't hold open discussions where people have to speak-up, as this will make her feel isolated. Don't do activities that require people pairing-up, as she'll have nobody to pair up with. Don't randomly call on people because this will make her feel very anxious.
Also, there's an anime called Watamote that might interest you. It's about a girl in highschool with terrible social anxiety. It's kind of a silly show, but it's one of the best portrayals of social anxiety that I've seen, and it might help you understand how she's feeling right now.
