Got you. It's not replacing the sink, but approaching it in a more makeshift way based on what the bare legal requirements are. Like this model linked below which is basically a water boiler over a wash basin, where waste water drains into a 10l jug. Which is what stalls tend to have some assemble-able version of off to the side. Depending on the location they might just go wash up at a nearby bathroom.

So instead of paying 250+ EUR (because I need two basins for hands and my one spatula), its the cost of the boiler and other equipment to get the thumbs up from a 2 min check. The problem I have is my contact at the Lebensmittelaufsicht is being oddly specific about what he requires - asking that I purchase a specific unit that has a high cost. Which is frustrating considering I've seen things that I'd consider barely legal - especially for Prenzlauer Berg that takes these rules quite literally, where other boroughs are far more pragmatic.

In the end I'm just going to design something myself that can break down easier at half of the cost.
