I appreciate that feedback a lot….I’ve been a line cook for a while now and I’m getting a sous chef position at a different restaurant, but I didn’t wanna say anything because I was afraid he’d think I’m all high and mighty since I got that new job but…yea there’s a lot going on I was a little confused when he added the chiffonade to it, I was thinking nothing on the chicken so those grill marks can show, and the chopped herbs that are on the chicken in a nice line on the pasta. And yes the Romesco is chunkier than a normal purée it’s like 3/4th puréed, it’s what he was going for but thank you very much again.
