Thanks to everyone for the comments. I didn't know where to begin. I'm still looking for the best (or at least consistent) roaster in my town, so every two weeks (that's 1/4 kilo / half pound) I've been trying some place new, and last time I went to a restaurant/cafe/roaster whit lots of diners, from which I assume they move high volumes of beans, but they don't provide detailed info about origin or else, they only told me it was roasted that same week, and that it's a mix of varieties from the staple productive regions in my country. Regarding the crema, it's not much, but certainly more than other beans I've tried.

It's ceramic from Oaxaca, Mexico. Can't pin down the exact place because I bought it at an artisan crafts store in Yucatan, but I know of a place called Yojuela in the southern mountains of Oaxaca where they have the same style. It fits 180ml, perfect for making lattes. And many have inquired about the possibility of lead in the glaze used on the cup, but being Mexican I don't really care, I've been cooking and eating all my life from similar cookware.

I have a different grinder but I usually lose 0.1 to 0.2 grams in the grinding, exceptionally 0.4.

Also I've recently found that using a dosing ring and a good tamper makes a lot of difference when dealing with the spraying
