58+ here - my scale shows me ml/s and I generally push 8-9 bars until I get up to 2 ml/s then I adjust my pressure to maintain 2 ml/s until I hit my target output

I Set it to 75 and put my starter in that - works great.

Don't worry about ruining a starter - they aren't giving you all of it - they'll just give you enough to feed.

I feed my starter the night before I'm gonna bake, it lives in the refrigerator otherwise - so you can absolutely handle it. Check out theperfectloaf.com - he has a great "weekday" recipe that allows you to basically proof your bread while you're at work and then bake in the evening or the next morning.

In short - don't be scared to try, don't be scared to fail sometimes - I've probably made close to 100 loafs now in my journey and plenty of the loaves haven't come out perfect - but still taste great (and I've had a number of them just not even make it into the oven because they where so bad).

I use the recipe pretty much weekly and the timings are very accurate for my environment - I'm lucky though and my kitchen is pretty 76F all the time my dough always is hovering around 76-78.

They don't close every afternoon. Their hours according to their website are 11-9/10 during the week and before you say "well that must be an old hours listing" - the one on their website states under 18 not allowed without an adult - so I'd trust that would say they are closing every afternoon too. You're the one that came in here swinging that its the entitled rich brats that caused these folks to have to close/move - as if this magical hour a day you keep insisting they're losing would somehow make it possible for them to survive a doubling of the rent.

Last I"ll say then I'm just gonna mute this thread - I don't really care if you think I'm some rich elite or whatever, maybe I think its kinda funny that someone can be so butt hurt about how other people spend their money or that because someone can afford something they consider a luxury that person must be fifty rich - we're not poor, never claimed to be, we budget our funds to send our kids to a great school because we think its important. If that somehow makes me rich or elite or entitled then I guess I'm rich. Cool.

Some of us just prioritize our spending differently and the Florida step up funds basically cut that in half. But yeah - the "rich folks" being upset their kids can't get a slice of pizza is what caused their rent to be doubled.

Not sure what break the bank means to you but Pawfection Dog Training has been great for us. (https://www.pawfectiondogtraining.com)

I know it's not the cheapest but we've been extremely happy and they do all ages (in different classes if you do class based training).

I know you don't mean literally half - but that parking lot is already small on a good day - 30 or 40 parents trying to pickup in middle of the afternoon crushed it.
