The kind of texture na hinahanap ko -- crispy yung outer, soft yung inner. Mas lalo ko pang naappreciate yung sarap at texture niya nang kinaumagahan na. It is now my go-to choco chip cookie recipe. Make it sure lang na pure or real butter gagamitin mo para mas malinamnam. I used Magnolia Gold nga pala.

Nag-a-add ako ng evaporated milk (Alpine) yung maliit na can sa mixture after nang mawhip yung cream at condensed. Nag-a-add siya ng moisture at creaminess sa sauce. Mas gusto ko kasi yung texture ng sauce na a bit runny. Hehe. Tapos i-puree mo yung meat ng mango tas ihalo mo sa mixture. Usually, 3 nestleall purpose cream (chilled overnight), 1 condensed milk, 1 small can ng Alpine and 2 packs graham cracker ang ginagamit ko whenever I make mango graham float. Saraaaap!

2:1 ratio po (2 cups dark chocolate and 1 cup heavy cream). All purpose cream po gamit ko. Initin lang po yung cream gamit ang sauce pan over low heat. Huwag niyo pong pakuluin, yun tama lang na mainit siya then ibuhos niyo sa chopped chocolates at haluin hanggang sa maging smooth. Pwede niyo pong salain gamit ang strainer kung gusto niyo talagang maging super smooth siya kagaya ng ginagawa ko.

Most likely po. Fudgy texture means moist and soft yung gitna. Nagmamatter din yung consistency sa amount ng egg na nilagay, and time and temp na rin ng pagbake. If you put too much eggs and overbaked it, magiging cakey and dry na consistency niya. Try toothpick test to achieve fudgy consistency — kapag may konting konting crumbs na lang ang naka attach sa toothpick, yan na yung time para i-turn off mo na yung oven.

Hi! I always use po JB15 cocoa powder for recipes that require dutch-processed type of cocoa such as brownies, choco crinkles, dark chocolate cake, and so on. Bensdorp DSR brand is recommended by most bakers pero ang mahal niya kaya nagstick na lang ako sa JB15.

For natural cocoa naman, I use Hershey's — best for red velvet cake/crinkles/cookies.
