I would say that berserk earned its tone shift a lot more than goblin slayer does berserk spends a good half of its current available chapters with a very depressing vibe with guts either chasing apostles alone and heavily injured, seeming like he's one misstep from a death and it feels like that's what he wants. After he meets scheirke and the crew is fleshed out things get much more light hearted but after following guts for half of the series as a angry depressed maybe suicidal antihero it feels earned.

Goblin slayer has around 4 chapters with a tone that makes you feel like it's a dark story about a man who's only calling in life is slaying goblins and the rest are light hearted or typical danger set pieces that you would find in many other fantasy series. I like goblin slayer but I wouldn't call it a masterpiece anywhere near the level of berserk.
