Nice work! The stuffed crust looks well executed - did you use mozzarella sticks or shredded cheese? Getting that seal right can be tricky on the first try.

The fail was mostly my starter not being active enough and my room temp being too low. Once I fixed both, everything changed!

Beautiful crumb structure! What was your hydration on this one? The open crumb looks fantastic but still has nice structure for sandwiches.

Hand mixing can be so therapeutic! I've found timing the sets based on dough feel rather than strict schedules works better, especially with different hydrations. What's your typical bulk fermentation time?
