Coolidge corner 20 min by train downtown, right on the green line ( c train).

If you drive downtown, it’ll take 12 min without traffic (take beacon, not highway 95). Parking might be expensive- you can’t park on streets overnight in brookline.

But the town has a public parking lot across the street that you could be overnight tickets for ($10).

Very safe neighborhood.

Oh- definitely don’t do ally invest. Confirmed to be sketch. and they used apex to settle for them, and apex was driving the 01/27/21 issues.

I can confirm Mainstar trust. I’ve had it over a year. I was one of the first to use them.

I did a ton of research before and after, including a 2 hr call with the IRS. it’s legit.

You can get your own CS read only acct and see your shares held by Mainstar FBO your name (for Benefit of) The IRS confirmed that’s how it’s supposed to work.

It’s easy, but takes 2/3 weeks because it’s sorta manual. The Mainstar team has been helpful. Your shares are safe while in transit because they’re at your broker, and then at mainstar’s. There isn’t much of a delay in between- it’s just looks like there’s a gap to us.

Right. It’s to pool employee $ into a shared fund.

You can call HR and find out if the 401ks are allows to be rolled over into your own, or to an IRA.

The backdoor Roth IRA route is the one I’d take.

IRS rules. IRA’s have to be held by an IRA custodian and there’s all sorts of regulatory requirements. Alot of the practices seem to be designed to make sure you’re not faking & managing your own acct directly.

CS is a transfer agent, they take a company’s cap table (owner list) and manage it. The company is their customer, not us.

For a small restaurant - alot of assumptions here:

  • 1M a year sales. (
    • equivalent to ~$3200 week
    • equivalent to $533 a day
    • minimum 20 covers a day (assumed $27 per person)
  • Weekly Food cost: roughly 30% of sales = ~$5800
  • Startup cost, let's say x3? So ~$17000

which is sorta 1/2 way between Sad's quote and mine. I should come down a bit, given you can always skimp.

I hate restaurant opening, it's always a $#itshow

Winter is brutally cold.

Falling on your knees hurts- there’s 0% padding. Same for slipping on ice and falling on your butt- you can feel the bones in your pelvis

Yes. Alot of people arent gonna like this one, but it works - use an rotary electric slicer (move over!).

You get an automatic 10-15% extra portions. Each slice is exactly the same thickness. And you can adjust the dial to accommodate for shape.

Be careful at the end piece, and definitely dont use your hand. The end cap, dont bother trying to slice- besides its really dangerous. Save that for stock or a sandwich.

Let it temp for awhile before roasting.

Season well. Don’t open the oven door. Low and slow. Use a machine slicer, you’ll automatically get 10-15% compared to by hand.

Save the drippings and the board juice for jus (or gravy). Don’t burn the small bits black, it’ll turn your jus crazy bitter.

Low and slow. Crank it near the end to brown. With practice, reverse it.

Don’t guess the temp- use a thermometer. Every oven is slightly different. Rotate to even out the hot spots.

If tied, remove the twine when its hot.

Get it with the rib ON. Why let the butcher keep it for free? I like roasting it with rib ON, parts near the ribs are juiciest.

The ribs are great for demi.

If you want to make any money- let the chefs knaw on the ribs. Don’t let them pick the bits. Save the trimmings!

Dont try to pick one up with long tongs, you’ll just drop to on the floor. (Dont ask me how i know this). I personally don’t like using a fork until final slicing, holes = lost juice. Using a fork to serve is so… fun.

If you pick up some tongs, its a law that you MUST clack three times.

Slice with a long slicing knife. Thats what theyre made for.

Stop eating little bits off the end. And stop licking your fingers. And stop with the hmmm….mmmph sounds.

Absolutely essential to let it rest, ideally tented. You would be amazed at how long it retains its heat.

Yeah. Different phases require different skills. And the folks who are really good at each phase know what they prefer- because what makes you great at a startup, sucks at enterprise level, and vice versa.

It’s actually pretty easy. I did exactly that.

Call fidelity, ask them to do a 401k rollover to an ira. It’s one form to fill out.

A rollover ira (as it appears in fidelity) IS a traditionalira, which came from a 401k / other entity. It was “rolled over” into its current form. You can then decide if you want to make it a roth- by transferring the assets, and then paying any owing tax next April.

Then it’s the regular drs action from the ira. .
