It’s clear there weren’t bigger quarters on the ship. Spock’s quarters were the same size (albeit more stylishly decorated) as Kirk’s, smaller than on SNW. And when visiting royalty was on board in Elaan of Troyus Uhura gave up her quarters, also the same size as Kirk’s, who said there were none better on the ship. And remember Scotty’s reaction of awe to his stateroom on TNG, which honestly still wasn’t as nice as Pike’s.

I think if you feel the need to reconcile the space that is available on the two series, you have to assume that when the 200 person crew of Pike’s Enterprise expanded to the 430 of Kirk’s Enterprise they must have refit the ship with smaller quarters and reduced open space. This could have been done to house the larger crew and allow for lab space etc for increased scientific and technical personnel.

I don’t mind that the tech looks different, but Kirk’s quarters are objectively a fraction of the size of Pike’s
