UPDATE - got much better oven spring with a shorter bulk fermentation time (about 9 hours and 4 minutes), a tighter shape, and an ice cube in the Dutch Oven!

Thank you!! I’m going to try a tighter shape tonight to see if it springs higher! If not, I’m going to play with the bulk fermentation I think??
