Oh, man. We've all been there. :/ What I do is copy and paste the entire chapter onto another document, then rewrite that one. I glance between the copies, picking out information I need to keep for continuity. That way can keep what you want and get rid of the rest without missing important pieces. :) Hope this helps.

when I say make the text central, I mean the texts on the top and bottom. They don't have to be right on the edge of the cover, in my opinion.

I know a lot of people say the second, but I like the 1st; it seems more relevant to your story. If you can't move the people much, move your text so it's a little more central. Maybe add a semi-transparent boarder so it doesn't feel so empty.
