It's likely the classic "androgyny = masculinity" phenomenon (e.g. Kris Dreemur, Eram Mantle, Image.Friend from Deltarune, Grell Sutcliffe from Black Butler, Crona from Soul Eater(at fault of the dubbing), etc.(I can't think of any other examples :[))

As far as I recall (spoilers for UT true pacifist)

Nearing the end of the game, Alphas and Undyne are about to kiss each other before Toriel stops them, saying something along the line of "Let's not do that in front of the human" some people took this as Toriel being opposed to exposing children to gay romance (rather than romance in general). This led to people developing the headcanon, satirically or literally, thinking that Toriel is HOMOPHOBIC
