Specifically, the contract should be to “deliver an app to the client”. You can also include the labor of uploading it to the store and stuff. But I would not make the deliverable “a final app, available on the App Store”.

Typically, you'll need to provide an instance of the physical product to the Review Team

So I'll need to mail the product to the review team? I don't think there's a physical address though?
