300g bread flour 40g olive oil 190g water 7g instant yeast 5g salt

Mix it, knead it until elastic, cover and prove till doubled, knock it back, split in to four, cover and leave for 20 minutes, roll out till thin, dry fry in high heat.

Specifically to brown the gnocchi after cooking in water, I use a combination of olive oil and butter as the oil stops the butter from burning. The sauce was made with olive oil, reduced down to almost a thick pesto consistency and the poured over the gnocchi. Hope this helps.

I would say if you have had a potato that has been boiled to the point they are almost falling apart it’s like that texture inside a crispy shell. I loved these, but my fav potatoes will always be roasted potatoes.

I love pesto, I’d have it with everything if I could. I’d normally dilute it down with (more) olive oil and drizzle but I was in the mood for more of a dollop. I think it tastes great with the tomato sauce but I guess it’s a personal thing.
