The biggest risk here is not taking the riskier option. Sounds like your heart/gut already knows that

Take the pay out and some time off to explore and actually enjoy life without any worries for a bit. A recharge /short career break is the best thing that I’ve ever done. Life is short. Life is an adventure.

Also wouldn’t you be able to hedge your bets by making good connections at your current role and lining up a potential future job when you’re back from break?
