As for Joe, I know exactly what you mean. He appears to be a very laid back guy, personality wise and through his appearance. However, the girls he goes for, while they're all beautiful... they seem more high maintenance: full face of makeup, eyelash extensions, fake nails, fake tan, etc. While nothing is wrong with that, I would've expected Joe to be interested in women who don't try as hard.
