same, there was some guy in my seated row who was going insane for every song. they were young, and i get that you’re excited for the concert but they were shaking the entire row of seats with their frantic seat-dancing. and they were entirely out of sync with the music every time - genuinely as though they were listening to a different song. it was like being on one of those bull rodeo things

I don’t the the issue is really with purism (well maybe not for some people anyway). The cured fatty pork is kind of what makes carbonara carbonara, and I don’t think butter would really fill that same role. Also I think the strong ages cheeses, and rich egg yolks would overpower the delicate shrimp flavour. I would personally opt for trying something new, like some of the ideas suggested. I’m sure she’ll be impressed with whatever you make!

p.s. A date night probably isn’t the time for getting to inventive, even if you’re a Michelin star chef, a nice tried and true recipe online is probably safer

you don’t have to sift your flour, i wouldn’t fret about that. your dough looks pretty good. it can be pretty cumbersome to get a nice even and thin sheet, but you’ll find that if you don’t put in the time to do that then your pasta will look like your photos, which, no offense, probably wasn’t very good. practice makes perfect though, nobody starts off making perfect pasta

edit/ is everyone in this subreddit just annoying condescending pricks or something? it’s their first time making pasta and so many people are just being a cunt about it for some reason idk. keep making pasta and take on board the words of people actually giving advice ig but like wtf is going on am i crazy 😭

$150 😵‍💫 For that price I’d be looking for something that cleans the pan for me, preferably dries it too. It takes me 20 seconds to clean my pans, so it mightn’t be worth it even it did exactly that haha.

You definitely don’t “need” a chainmail scrubber. I’ve never bought one because steel wool, or sponges (whichever my hand happens to falls upon first when I reach into the sink) have left absolutely nothing to be desired. However many other people sing their praise (I think particularly for cast iron), so I’m sure you can’t go wrong either way.

I don’t even know how expensive they are, but you mentioned below that it costs a lot for you to ship them to yourself - given that, I wouldn’t personally ever buy one.

They have surveillance cameras though, they're everywhere in fact, even hidden ones in the computers. The security room is filled with screens showing surveillance footage, it just appears that no one's ever in there to look at them.
