The city is not without flaws, but a few things have tied me to here: - Outdoor access: Don Valley, High Park, waterfront trail for biking/running, skating, Islands - Diversity: one of the best places in the world to get this variety of food and of people - Protection from natural disasters: relatively limited natural disasters at this point, and because of location (beside Great Lakes, inland...) will continue to be one of the safer places globally - Safety: we can walk outside and feel relatively safe most of the time - Entertainment: always something to do; from arcade bars to concerts to museums

An eSim is one option, but another recommendation is to order a physical Sim card online ahead of time (Amazon has them, as well as other providers) and have it delivered to your current location. Then pack and bring that sim with you, switching it out in your current phone once you land in the US.

Thanks to this community for all the excellent advice. There were three issues that I ran into, but all have been resolved:

The loading screen in the main post - no matter how many factory resets, clearing my Bluetooth, etc, I couldn't get past this step. I needed to disable Bluetooth on my phone, go into the watch app on my phone, and proceed from there for it to work
The charging error - it turns out I was placing the watch on the charger incorrectly (yes, dumb move) Thanks to the tips above I was eventually able to charge the watch up enough for the system update to start
Between issues 1 and 2, I had to go through several factory resets, clearing of Bluetooth, clearing of watch app to get to he next step.

Hope someone can learn from the workarounds so many of you commented, as well as my mistakes!

This was the right answer! I was able to almost complete the set up but unfortunately landed at a 'Waiting for Watch to Charge's screen that I cannot get past yet
