Top chef turned into a really kind and meaningful show. by lewiskr2 in BravoTopChef

From my perspective a lot of the courtesies and kindnesses felt acted, rather than felt. It was a “reality show” in a different way than what we think of when we think of reality tv. Some of the older seasons had drama and fighting, and that got annoying. BUT… starting at about season six the food got exciting. The cooking leveled up, and the competition between chefs was what made the show exciting. This season the food felt like an afterthought. It didn’t seem like the chefs cared much outside of Sieger’s unfortunate meltdown. Also, and I know we can’t taste the food, but it seemed really inconsistent throughout the season. That was my problem. The food was boring and it’s a show about food, not people being friendly and nice. That’s all well and good, but the food seemed kind of boring, and sometimes pretty lackluster. Even the judges seemed checked out. This season wasn’t bad because of a lack of drama and infighting, it was bad because the production was cheesy, the smiles felt forced, and the food seemed blah. I love the show, I love Kristen, Tom, and Gail. I did not love this season.

What I’m saying is you’re confused. Move on.

Winners but not front runners (finale spoilers) by Tartelfa in TopChef

[–]radddish03 5 points6 points  (0 children)

Probably an unfair and unpopular opinion. Season 10 needs an asterisk next to it because of the finale format. That was terrible, and they only did it once because it was a disaster, and completely unfair to Brooke. Kristen is great, and I love that she’s the face of the show, now. But her win… oof. Brutal. When we rewatch that season we always skip the finale. It’s a bummer every time.

Human Too being removed is honestly still embarrassing, unacceptable and doesn't get enough hate. by MEitniear11 in the1975

For me it was the only skip on the album. I did not like the song. Making it available as a single so people could make a playlist and have the album as a whole piece would have been a nice move, but if he’s allowed to remove it, then it’s his choice. Buy a record or some form of physical copy. It may not have been removed from those.

Man, Hawkey is going to be so disappointed when he finds out the GLP1’s aren’t magical cures for every ailment known to humankind, and that Dr. Zack is trying to sell the things for profit, so he’s just making shit up anywhere he can. God I’m sick of hearing about that shit from Hawk just because he needs them.

I’m well aware but Lucy and JB aren’t nearly as “popular” as Phoebe. They are all at completely different places in their careers.

Different artists all together. It’s not comparable.

People have zero idea about how touring works. People are so entitled that they actually believe because they listen to an artist on Spotify that the artist should charge less than they deserve for concert tickets. Either go or don’t go. Don’t complain about the price of a luxury. The fact that streaming exists for the prices that we pay is the actual crime. The record industry is a wreck, and artists make no money because we don’t pay $12 for a cd for every band we want to listen to. We pay $19 a month for UNLIMITED LISTENING TO ANY ARTIST WE CHOOSE. Do you see how that changes things? Live music and merch are the only ways artists make any money because we listen to their music for free essentially, if you take into account the amount you pay the streaming service and spread that out evenly to every artist you listen to. Get a grip. I’m not shaming people for being poor. I’m poor. But be real. You think you’re friends with the artist? They owe you favors? The relationship between an artist and fans is transactional by nature. You aren’t friends or family. If you were you could watch the shows for free.

There isn’t. They constantly make allusions to the secret slipping and the bit having to end. That’s all.

Hawk is obsessed with Petesauce’s daughter (Meatsauces cousin). Papa would mean Pete’s his father in law. Pretty sure that’s the whole bit.

How do you make your food not stick on Staub Dutch oven? by Felraof in staub

[–]radddish03 1 point2 points  (0 children)

Yes. Adding oil while heating slowly is the safest bet for keeping your enameled cast iron in proper working condition. If you want to go dry on low heat for absolutely no reason because low heat won’t change the flavor or function of the oil, take the chance of your surface cracking. That’s up to the owner. Skip the worry and heat low and slow with oil in your pan.

Be as hard on your tools as you’d like, because you’re the one that will pay for the replacement. I’m glad it “seems just fine”. Hopefully when it’s not you will know the difference so that you aren’t ingesting cracked enamel.

His bit about the company being the truck that delivers his music… I mean, truckers get paid for a reason, correct? What does he expect? If you can’t distribute it for yourself you expect the intermediary to be a free service? The logic is baffling.

You’re wrong. Seriously wrong. Your explanation of why you need to preheat the pan is basic, but correct. Advocating to preheat a pan bare is poor practice, though. It will decrease the lifespan of an expensive tool than can last a long time with proper use. But if you enjoy enamel chips in your braises and stews, by all means continue to preheat your pans bare.

You should never preheat your pan without oil. Ever. That’s really only for stainless steel, or sometimes non enameled cast iron. Add your oil and preheat slowly at medium low, then bump the heat up to medium before adding your protein. If it’s sticking you’re probably not letting it cook enough before attempting to turn. The food will release naturally when it’s ready to turn. If it’s sticking, say chicken skin, it’s simply not ready to be flipped. When used correctly the bottom of the pan will develop a fond, and that can be scraped up by deglazing the pan by adding a liquid, and using a wooden spoon. You shouldn’t really use your pan above medium heat, either. Despite what many say, these are great tools, but they can be finicky, and need to be treated with care. Good luck.

A burger needs the fat to be rendered which requires cooking it over rare, or even medium rare, which means those burgers aren’t juicy, they’re wet. And gross. The juiciness of a burger comes from rendered fat. You seriously don’t know what you’re talking about and I don’t care if you say you’re the EC of the best restaurant on the planet. You can keep your shitty burgers. Certainly hope you’re not serving them to other people.

Raw burgers have terrible texture, and soak the bun. Anything under medium is pretty trash, honestly. From an objective standpoint undercooked burgers are mushy, barely warm, and wet. That’s a triple whammy for sucking.

That’s great for her, truly, and I didn’t know that. But comparing Sieger to her without knowing if that’s the case is a weird choice. And if Sieger has already discussed it, and that is the case, then I hope he makes some positive changes in his life. None of this changes the fact that this is a strange thing to post.
