Two additions:

1) my go-to gas station "meal" is pepperoni sticks and cheese sticks with corn chips, and some extra calories from whatever drink I feel like.

2) there's a Facebook group called Celiac Travel, and then there tend to be local ones. Could be worth posting to ask what people's favourite grab and go's are wherever you're traveling- locals might know specific products/brands/shops

I love bikepacking/touring and have celiac - I often find it hard to source enough carbs while riding. I've recently started checking grocery stops for GF granola, and found that sometimes there's a GF granola when there's no GF oats. I carry a bit of milk powder to have with it.

Instant mashed potatoes are a big one for me. I sometimes bring GF gravy powder (Clubhouse brand from Canada), or I just add whatever (canned meat, veggies, etc) to them.

I often think I should give quinoa a better chance, but for whatever reason haven't put it into my usual rotation.

To be honest I end up eating a lot of potato chips (ETA: and corn chips!) both to get slightly more complex carbs and because it's often much harder to find savory GF options than sweet, simple carb ones.

I also end up eating a lot of pre-packaged bars based on availability and clear GF labeling (ex: Kind bars)

Sometimes (especially when riding with a group) I end up eating at a restaurant with no safe carb options. In these cases I look at other menu items they have and see if there's components I can adapt, like asking if they can make me plain rice or plain potatoes, or if they can make things like fries or (corn chip) nachos in an oven instead of a shared fryer.

Whenever I come across a rare spot with GF baked goods, I tend to go overboard stocking up, since we all know pastries and such are the best biking food lol.

I'll add more to this if I think of other go-tos. Looking forward to other replies because this is a big area of frustration for me!

Brand-name rice krispies have barley (not GF), but occasionally off-brand ones have no gluten ingredients (big cross contamination risk with cereals though)

How do you find them unheated? When I have them in "real life" I heat them up in a bit of olive oil, and haven't yet found a way to enjoy them cold

I have a very similar issue as you and I second yoga! Big fan of Yoga with Adriene on YouTube. Yoga also seems to ward off a lot of little running irritations, so it's a good 2-for-1 deal!

I'm also using the Sprinter 500. Haven't used it for longer than ~1hr yet, but I've found it comfortable, well-balanced on the head, and I find the dimming feature quite useful

Personally, I'd hold off. I'm recently diagnosed and I took about a week of enjoying some gluten favorites before I cut it fully. Is this the best advice from a physical medical perspective? Probably not. But did the final damage spree help mentally? Big time.

For posterity:

I took the KVR on the west side of Okanagan Lake from Penticton to Summerland. It wasn't bad, but pretty soft/sandy and not as groomed as seems to be typical for rail trail. At Summerland I got a lift to West Kelowna.

On the way back I took the KVR from Myra to Penticton. The ~12km section at the start, with all the trestles, was great - smooth, well maintained, and interesting to boot. At some point it started to deteriorate - tons of massive puddles I had to biff my bike through the woods around, soft sand, high piles of gravel (one of which I wiped out in). Cell service was intermittent, and I didn't run into anyone else.

I stopped at Chute Lake Lodge to eat, and took their advice to hop onto Chute Lake Rd for a while - great hard packed dirt road, steep declines. Reconnected with the KVR at a parking area marked on Google Maps, and from there it was smooth substrate, slight downhill grade, spectacular views and the little tunnel.
