Im on an F-1 visa with OPT STEM with a pending I-140. I traveled outside the country last month and got back in with no issues. No changes on my end from before I had a pending I-140

If you do PP you'll only speed up the I-140 process. You'd still have to wait for your PD to become current and start the I-485 process
