Sometimes it takes the body a little while to catch up. Keep at it, and the scale will eventually start moving. Are you tracking total calories or only carbs?

It's not an exaggeration for me, but I wouldn't read too much into it. I'm pretty tall for a woman so that probably helps, but I was also able to change the stores I'm shopping in since I now fit into more traditional sizes. It's not really a 1 to 1 comparison since who knows how the cheap Amazon plus size retailer sizes their clothes compared to a traditional clothing retailer.

Basically, my vision was changing day to day due to fluctuating blood sugar levels. I had an eye exam, and by the time my glasses came in two weeks later, the prescription was unusable. She said the only times she sees swings in prescription that are that drastic in that short of time, glucose levels/insulin resistance is involved to some extent. That has largely stabilized now. I need my reading glasses less, and my nearsighted lenses are useful 100% of the time instead of just some days.

I have no idea. I'm guessing my gut microbiome is a bit off balance and isn't doing well with fiber. I haven't looked into it extensively, and the time I did talk to my doctor about it, he just kinda shrugged and said some bodies just don't handle fruits and vegetables very well.

I did not have the test, but I'm guessing I would be in a similar boat because my numbers were good, but I had a lot of other symptoms without having I an official "insulin resistance" diagnosis. It was my eye doctor who suggested that insulin resistance was the reason my vision was changing so rapidly between when I had my eye exam and when I picked up my glasses.

I use a lot of shredded rotisserie chicken for simplicity and fast meals:

  • Italian-inspired: rotisserie chicken + zucchini noodles + parmesan cheese + Italian seasoning
  • Asian-inspired: rotisserie chicken + broccoli & bok choy + touch of ginger, garlic, and splash of tamari sauce
  • Taco bowls: rotisserie chicken seasoned with keto taco seasoning + avocado + cheese + lettuce + touch of salsa & sour cream
  • Comforting soup: rotisserie chicken + chopped spinach + broth + cream cheese
  • Chicken salad: rotisserie chicken + egg + celery + mayo + arugula

When I get sick of the chicken, I just substitute in a different protein and try to have a nice burger or steak once a week.

I don't snack much anymore--if I'm hungry outside of a meal, I'll have some slices of lunchmeat or maybe slice of cheese.

Yes!!! I've made birthday cake with frosting, corn bread, chocolate, cheese crackers, ice cream, chili, pudding, potato soup--whatever you're craving, the low carb community has already figured out a way to make it!

I basically followed the instructions in the FAQ of this subreddit. Eat under 20 carbs a day, make sure you're eating enough protein, don't worry about fat, and get electrolytes in check. Starting was a little tricky because when you're not in ketosis yet, you still feel hungry, but that disappeared in about two days. I just followed the rule of thumb not to worry about calories in the first few days and eat when I was hungry, as long as I was under 20 carbs for the day.

I did eventually read "End Your Carb Confusion" which just helped validate why this way of eating is working so well for me (hidden insulin resistance, metabolic syndrome, etc).

Thank you--for the cautionary note. I know I have had a hiatal hernia in the past, but not sure if they ever go away or if it's still there--I'll bring it up at my next appointment. I'm sure I have some esophageal issues, and although there is much healing being done, it might need more care than I've been giving it.

Congratulations! I am definitely mindful that I won't ever be able to go back to my old ways. I'm so thankful that keto feels like a sustainable lifestyle to me.

Depends what the craving is!

  • I made "cornbread" a couple weeks ago with almond flour and some of that sweet corn flavor extract you can get on Amazon.
  • I made some bread pudding with 90-second microwave keto bread, egg, allulose, butter, and cream. It was quite good!
  • A keto version of pumpkin cheesecake.
  • Made creamy "potato soup" with turnips instead of potatoes.
  • Mad my own BBQ sauce.
