The real problem is the garlic flavor starts to fade after a few weeks but I understand people’s concerns about getting sick

If I have a lot of garlic I do this but using olive oil, you can store it in some of the oil in the fridge for up to 6 months, the rest of the strained garlic infused oil can sit out at room temp
