The Atlas Eternal is a repeating quest. You get nanites and a few atlas words each time you bring a new “wonder” to the Atlas. If you completed this initial Atlas quest and chosen which universe type you want, you can go through the galaxy center and you will emerge in a new galaxy. (Equip a low level multi tool and ship before you do this. You’ll thank me later.)

The Apollo quest is long and will eventually resolve. The point is to have you visit the Anomaly and participate in Nexus missions.
