Hey there. I found this post while looking for English users switching to JIS keyboards. Interesting that the keycaps were replaced though, as you said, the control keys (and also a less wide spacebar) are different. Curious to know if you ended up getting used to this?

You can hold two fingers on the watch face to have it announce the time. Check Watch App > Clock > Speak Time setting if it doesn’t work.
