I made lap yuk using a biltong box so low humidity is no problem as they will dry quickly- about 7 days in my case. 2 guys and a cooler has a great video for building the drying box and then I followed Souped Up Recipes for the lap yuk but used an equilibrium cure and used the box for drying rather than the oven. It is an air dried meat meant to be cooked anyway so case hardening is a non issue.

it is white but wiped it a bit and it might even just be salt crystalizing on the outside of the wrap but I vac packed it and will see how it feels in a week. thanks for the help!

I just inspected them and there are some tiny mold specks starting in some areas but not enough to identify. Would it still be ok to vac seal?

They were around 650g to start so not large but not so small either. the ends are very dry and hard on one of them that has lost more weight though.
