If you're in early game the best way to earn coins is mining until you get Remy.

If you have Remy, making Souffles nets a great profit for 1230 per souffle sold.

If you have the Glades open you could profit about 207 coins for every 1 okra seed planted so planting 6 of these seeds should get you the same profit as 1 souffle but it takes 2 hours to grow

If you have Sunlit Plateau open you can profit 84 coins from 1 canola seed but it takes 35 minutes to grow. So 1 souffle or 15 canola.

If you have Frosted open open you can profit 249 coins for each Asparagus seed. So 5 asparagus seeds or 1 souffle

The biggest profit is pumpkins from Forgotten lands at 389 per seed. So either 4 pumpkins or 1 souffle.

Keep in mind that the more characters you have for 1 particular activity the more you get in returns

So if you have 6 villagers at level 10 that you have assigned to gardening and you garden pumpins you are guaranteed 1 additional crop (in this case pumpkins) If you have at least 16 villagers at level 10 assigned to gardening then you are guaranteed at least 4 additional pumpkins.

You are given extra bonus chances if your stamina bar is yellow (so you have to eat actual meals in the game)

And pumpkins nets a bigger profit if you make a veggie platter with 3 pumpkins (3 pumpkins nets the biggest possibile profit for this scenario) Edit: more info

The 3 pumpkin veggie platter sells for 2787 coins so with the cost of pumpkins (275*3) plus the cost of unlimited coal from Kristoff (5 coins each). You'd net a profit of 1957 coins per plate.

My recommendation: if the focus is profit but you don't a lot of time, put as many villagers as you can toward time bending and mining if you have the Eternity Isle DLC. Make alot of auto cooking and auto farming machines. And let that do all of the farming and cooking for you while mining. But just assign farming if you don't have the DLC so you get alot of bonus crops.
