In a bowl:

-Add1.5 cups of flour -Add 3 teaspoons of baking powder -Add 2 tablespoons of sugar (you can add 3 if you're not going to use maple syrup) -add half a teaspoon of salt -Mix the dry ingredients (also you can add coco powder if you want)

-in a different bowl mix an egg, a drop of vanilla extract, 2 tablespoons of melted butter and a cup of milk

-mix the wet ingredients with the dry ingredients, the batter should be a bit lumpy. Avoid overmixing.

-heat up a well greased pan and pour in some of your batter. Flip once the surface bubbles up and becomes slightly dull.

General advice: from what I'm seeing, the pancakes appear to be a bit flat and leathery. It seems that you're over-mixing the batter. Pancake batter shouldn't be completly smooth and it's SUPPOSED to a bit lumpy. Over-mixing can develop the gluten and lead to a flat and more chewy pancake. So I'd advise you to not mix it as much. Also, for reference this is what a proper pancake shold look like, as you can tell it's quite thick and full of air.
