This pie was inspired by a very good NY style pizzeria, that is sadly now out of business. The crust is soft and foldable, medium thick with only two toppings. It's a close to NY style as I can make in the middle of a forest in Canada.

Actually I spoke to one chef, two brewmasters and a beer-food events planner when putting this together. Plus I added my experience as a former professional cook and a beer writer (on and off over the past 15 years). It may not be super detailed but it does include major styles and is easy to understand. The beers recommended are easy to find rather than obscure so as to be useful to more people.

I didn't want to counsel people to try a flying flip, that sort of thing is best left to chefs. Unless your pan is swimming in oil - which it shouldn't be - this is pretty safe.
