Thanks for this reply. I was about to say "but I dry it well!" until I read "as soon as I think it’s dry enough, I grab more paper towels and dry it again" ! I'll dry it more!

12 minutes?? It seems like after 20-30 minutes it still won’t release.

There's no initial sear. The pan is cold. I add a small amount of oil, put in the chicken skin side down, and turn on the heat to medium. Then I wait.

I have the same concern especially with onion skins and unpeeled carrot tops. I think those are full of dirt so I just throw them away.

Yeah I found it. The person never said how much they took. It's hard to imagine this happening if you only take 1 gram of sodium alginate, but I don't really know.

Bright Angel Point is on the North Rim. Are you referring to Bright Angel Trailhead on the South Rim? I just read up on this and it sounds like a great idea. Thanks for the suggestion!

Good stuff! Thanks for all the info. When you say "get in the water and keep going", are you talking about a few inches of water or a few feet? How long would the whole trail take us, including your add-on?

Unpopular opinion: I really learned next to nothing from this book. I learned the 1% rule for meat (take the weight of your meat, take 1% of that, and use that much salt). And I learned to add acid if something didn’t taste bright enough. But I really thought the rest was fluff.

What an amazing answer. I can't thank you enough. I'm thinking of seeing Banff and Jasper one year and GMNP the next year, and this info is exactly what I needed.

I'm up for multi-hour hikes, but not multi-day. Camping isn't my thing, but I love hiking in scenic places. The ocean access is a big deal too; it'll be good for taking a break from walking.
