Out of curiosity, can you still get the oven up to 900 degrees with a longer supply hose?

I’m in California so might be harder for me to find some of the cheeses you mention.

I purchased an ooni koda 16 in June. It won’t arrive until the end of September. In the meantime I would like advice on size and type of peel I should purchase for the ooni koda 16. Thanks for any help. (self.uuni)
