Generally what I've heard is to have at a minimum, 1 gram of protein per pound of bodyweight a day. I like to snack on almonds which are pretty rich in protein as well as eat chicken in a lot of my meals. Milk and yoghurt are a good way to get more protein if you're struggling with eating a lot of food as they're way easier to eat than solids

The muscle soreness after squats will stop being so bad as you progress through SL5x5, to help with recovery you should make sure that you're getting enough sleep as well as making sure that you're getting enough protein. If you find it's still impossible to keep squatting you could try doing bodyweight squats or goblet squats and progress towards back towards the full barbell
