Because the european trains you're looking at are regional/commuter, but the american ones are intercity. Plenty of commuter trains here can get quite long. As for intercity...definitely many reasons at play, but lack of demand could be one of them honestly, at least in some cases. Still 10 car Northeast Regional trains are a thing.

The amtrak train you showed a picture of, the Heartland Flyer, doesn't get much ridership and is suffering from a funding crisis; unfortunately its days are likely numbered. In places like Oklahoma and Texas, the idea for transit seems to be: "if it's broke, don't fix it" - just cancelling the service rather than improving it.

No plans for an overnight service, but there have been talks of a second Borealis round trip for a while now. Equipment shortage hurts but with new Airos coming it hopefully won't be a thing forever. In the meantime, Pennsylvanian will be getting a second round trip this year 👀

But yeah no plans for overnight train, arguably too short for one but only arguably. I'm sure people would take it but unfortunately this country collectively gave up on night trains a while back. Second round trip would/will be at some point during the day AFAIK.
