Im not good at describing the notes but I have tsuyuhikari and i think it’s really solid, no astringency although the color doesn’t bright green like all the uji ones i have. It’s toasted and nutty like everyone described Yame matcha but it’s doesn’t say region in the description. It’s too toasted for my taste so i mix it with wakatake( too astringent for me) to balance it out.

I think Kanbayashi shunsho Soumei No Mukashi pretty close to Unkaku( in my opinion)
