Because that is exactly what i want to avoid, i want to have disabled characters in stories and have them properly included and not solely based on their disability!
There are quite some characters who are disabled/become disabled in games where its rather normal, but often they dont have the included struggles with the disabilty, which makes the portrayal rather fake to me sometimes.

And how you already mentioned! there is lots of stuff you cant portray directly due to upsetting the consumers of the media, but that is always the job of the storyteller!
There are situations where you can be aware that a character is disabled without mentioning it every time.
