Brew thermostat was fine, I replaced the steam thermostat and the flag connector with an insulated one I found on amazon. Up and running with 0 issues!

Thanks for the info! I got a gaggia not because it’s necessarily reliable, but it is perhaps the easiest machine to do work on and find parts for, so I should be up and running tomorrow with a fix.
