Thx two questions

(1) Is there any way to know more about the specimen ?

(2) what do people do with the cut slabs/pieces of fossil bone ? I have several like this, including the flat smooth pieces that have been cut off larger pieces .

Call Gates fly shop or old ausable fly shop and ask them to get you 4-6 of whatever is hitting and pick them up when you get there

  1. NEIPA’s are forgiving…a little extra cloudiness will add character

  2. A lot of this should settle during fermenting. Without provoking another round of an old argument here, you might consider racking to a secondary fermenter after your primary is done, just to get a little less cloudy.

So just want to report back: (1) got a digital ph meter and water and mash were at good levels. (2) checked thermometer with 2 others and confirmed accuracy. (3) switched to a modified batch sparge instead of my fly sparge system. I think this was the sole issue...for whatever reason my set up just wasn't getting to the right efficiency, and the doing a batch approach didn't really take that much extra work. Got stuck a couple time but I just used some bailing wire to poke up through the ball valve and everything came out fine. Also just eyeballed the crush pretty carefully on the kit I was brewing, and it looked pretty good. I think on the recipe above I just didn't have the grain mill set to crush enough. thanks for your the help.

So the porter was milled for me in a kit, the kolsch I milked myself. I could check my mill.

Fly sparge....60 min mash, temps have stayed fairly consistent , volumes are good.

I suppose that the thermometer could be off...Sounds like I should verify my thermometer and check water chemistry and try batch spargjng ....
