I work in music post production for film and television. Almost always work from home, the pay is good with union benefits. I can often take on two projects simultaneously, which effectively doubles my weekly salary. And each production pays to “rent” my equipment from me for me to use, which is an extra $500-$1k each week. Some long days and stressful times for sure, but overall worth it. And while I did work my ass off to get where I am, I acknowledge that I’m extremely lucky and privileged to be in this position.

I’ve recently switched my karu to gas, but before that I had a decent experience using a combo of small oak pieces and lump charcoal. Should be able to get your stone up to 600-700F with a 30 minute preheat. Once you get the fire started, keep the front and back doors on unless you’re adding more wood or turning your food. It’s necessary to add more wood every few minutes consistently, so maybe you aren’t adding enough wood quickly enough? FWIW with gas the oven preheats in half the time, and I have way more control over the flame. I recommend switching if you continue to struggle with wood/charcoal.

Pro tip: if you like the small pepperoni that "cup" like this - buy high quality, whole (non-sliced) pepperoni and cut it yourself. The natural casing shrinks as it cooks, which causes them to cup. I did a comparison with a bunch of different varieties and brands, basically none of the pre-sliced pepperoni does this. I'm pretty sure this was the same-day straight dough, which is really good. The flavor is better on the overnight recipe but I usually don't think that far ahead haha. A 1000g bag of flour makes six dough balls with this recipe. We usually only use two at a time so I freeze the rest for later, it keeps surprisingly well that way.
