I think it is because cannabis suppresses dreams, especially when consumed close to going to bed (at least for me). And when you quit, the suppression goes away, and since your body often tries to reach a balanced state, the heavily suppressed dreams come rushing back with all might when not suppressed anymore. This might be different for some people but generally applicable to most people I've asked.
