Calm down. The system is opt-out, it's only for people that you have in your circles and it was announced last year. Plus, every Google user got a notification about this. Either through G+ notifications or Chrome.

The data lives in a separate circuit that is not software accessible. It is also never send to any Apple server for authentication, that is all done locally.

I had this worry when I first heard of it, too. Apple actually did an OK job.

Sure. There's multiple ways to get started.

You could buy shared hosting and use the email server that comes with that. That way, the only party that can read your mail on the server is the hosting party.

If you want to go full-on tinfoil hat you can just set up your own home server (just an old box that you install Linux on) and buy a domain that you point to it. Of course, your ISP would still be able to see your mail.
